This is one of the simplest spiced rice recipe.  Takes only a few minutes to prepare, and the result is an aromatic rice preparation that goes well with most curries.  You can add some vegetables to this, but the main flavor is of the turmeric, cardamom and the aromatic rice.

Ingredients

Gobindo Bhog Rice or basmati rice – 1 cup

Water – 2 cups

Turmeric powder – ¼ tsp

Sugar – ½ tsp

Cashew nuts – 1/3 cups

Green cardamom powder – ½ tsp

Salt to taste

Clarified butter – 1 ½ tbsp

Method

Take rice in a bowl. Add water and rinse the rice.

Rice

Discard the impure water. Repeat this 2-3 times or until you are satisfied that the rice is clean.

Soak the rice for atleast 30 minutes, This is very important.

Heat clarified butter in a pressure cooker on medium heat.

Add the cashew nuts and fry till they are light brown.

Cashews and Turmeric (Haldi) for the Yellow Fried Rice

Now add the turmeric powder and soaked rice. Mix well and cook on a high flame for 2-3 minutes.

Add water, cashew, sugar, cardamom powder and salt. Add ½ tsp clarified butter and stir well.

Now close the pressure cooker with its lid. Cook till 2 whistles.

Switch off the gas. Let the pressure completely release by itself.

Then open and set aside for 5-10 mins.

Serve with curry (Vegetable, Chicken or Mutton)
