Lauki (Ghiya) Ke Chilke Ki Bhaji

Ingredients
Peels of Lauki
bottle gourd – 1 cups
Potato – 2
medium size
Dry red chilli – 2
Cumin seeds – 1 tsp
Turmeric powder – 1 tsp
Red chilli powder – ½ tsp
Garlic paste – ½ tbsp
Salt to taste
Mustard oil - 1 ½ tbsp or as required
Instructions
Wash and thik peel off of the Lauki (Lauki ka chilka) and cut into ½ inch pieces.
Wash and Peel off of the potato and slice the potatoes lengthwise, into ½ inch pieces.
In a pan add the oil and turn the heat to medium.
Add cumin seeds and let them crackle, turn the heat to low.
Now, immediately add the potatoes, cook them on medium heat for five minutes.
When potatoes are half cooked add Lauki ka chilka and sauté.
Add salt, red chili powder, turmeric powder, garlic paste and salt.
With a spatula, gently move the potatoes and Lauki Ke Chilke around in the pan for 5 minutes, so they are all evenly coated with oil and all spices.
Cover with a lid and let the cook in their own steam for 20-25 minutes.
Continue until potatoes and Lauki Ke Chilke gets fully cooked. Turn Off the flame.

Serving
Serve with chapatti , Puri and parathas and also serve with Chawla dal.
