Ingredients
White fish fillet – 450 gms
1/2 inch thick, in one piece
Butter – 2 tbsp
Button mushrooms
sliced – 200 gms
Spring onions
finely chopped – 4
Thyme
crushed – 1/4 tsp
Paprika – 1/2 tsp
Lime juice – 1/2 tbsp
Salt and pepper to taste for season
Instructions
Butter a baking dish and place the fish fillet skin-side down, sprinkle with salt and pepper and set aside.
In a saucepan, heat butter, add mushrooms and spring onions and saute.
Sprinkle thyme and cook until tender.
Pour mushrooms and onions mixture over fish fillet and sprinkle with paprika and lime juice.
Bake in a pre-heated oven at 450 f for 12-15 minutes or until fish flakes easily.
Serve from the dish with bread and butter on the side.
