Mutton Rogan Josh – fantastic lamb curry from Kashmir

Mutton Rogan Josh is a fine Lamb delicacy from Kashmir. Mutton Rogan Josh means Red lamb and It derives its name from Kashmiri Red Chillies .

Ingredients

  • Mutton – 1 kg
  • Curd – 1/2 Cup
  • Clarified butter – 4 tbsp
  • Onion (sliced) – 2
  • Black cardamom – 3
  • Cinnamon stick – 2 inch
  • Bay leaves – 2
  • Hing – ½ tbsp
  • Cloves – 4
  • Red chilli powder – 3tbsp
  • Green cardamom powder – ½ tbsp
  • Saffron a pinch
  • Sugar – 1tbsp
  • Nutmeg powder – ½ tsp
  • Dry ginger powder- 1tbsp
  • Salt to taste
  • Coriander leaves – 1tbsp for garnishing

Method

To Marinade: In a big bowl add mutton and curd and mix well. Leave it for 2 to 3 hours.

Heat clarified butter in a handi add black cardamom, bay leaves, cloves and cinnamon stick. Then add sliced onion, fry it till brown.

Now add Heeng (Asafoetida) to the marinated mutton

Add red chilli powder, ginger powder, green cardamom powder, nutmeg powder and salt. Stir very well.

Cover it and let it cook 20 minutes on low flame till mutton is brown in colour.

Add water and cover the handi with a lid and let it cook for a high flame for 6-7 whistles or till the mutton is tender.

Serving and Garnishing

  • garnish with coriander leaves.
  • Serve with white boiled rice or Paratha or Roti.
