Ingredients
List of ingredients required
- Lauki or Bottle gourd – 1 Small size (700-800gms)
- Onion – 1big size
- Turmeric powder – 1/2 teaspoon
- Salt – as per taste
- Ginger – 1 teaspoon (finely chopped)
- Garlic – 1 teaspoon (finely chopped)
- Tomato – 1 (chopped)
- Coriander leaves – 1/2 tablespoon
- Mustard oil – 1 &1/2 tablespoon
Phoran
- Black Cardamom – 1 piece
- Green Cardamom – 2 pieces
- Cloves – 4 pieces
- Dry red chili – 1 piece
- Black pepper – 6 pieces
- Cinnamon stick – 1/2 inch
- Bay leaf – 1 piece
- Cumin seeds – 1/2 teaspoon
Cooking Process
- Peel the bottle gourd. wash and cut the bottle gourd into small cubes . Keep them aside.
- Peel the onion and cut into slices. Keep them aside.
- Heat oil in a pressure cooker over medium heat. Add phoran (cumin seeds, dry red chili, cinnamon stick, black cardamom, green cardamom, cloves, black pepper and bay leaf) and let them splutter.
- Add the sliced onions and sauté until they turn translucent.
- Add lauki or bottle gourd and salt. Mix well.
- After 5 minutes add turmeric powder, chopped garlic and chopped ginger. Stir everything together to coat the vegetables with the spice mixture, meanwhile, chopped your tomato.
- Add chopped tomato and cook for 2-3 minutes. Add 1/2 cup water or as per your required, Cover the pressure cooker with a lid and cook on medium low heat for about 15-20 minutes or give it three whistles and gas turn off. Allow it to cool down completely. When pressure released, open the cooker. Once the vegetables are cooked add chopped fresh coriander leaves (If lauki ki sabji at this time will be watery. Leave it on high flame till you get the desired consistency).
- This simple and wholesome sabji is often enjoyed with roti or rice and making it a satisfying meal option for both lunch and dinner.
Note:
- You can also prepare this lauki aloo ki sabji in pan. It’s also taste good. Specifically, if you make stew, pressure cooker is good option for because pressure cooker method is quick and easy.
