Ingredients
- Cluster figs (gular) – 500g
- Onion – 2 (finely chopped)
- Onion paste – 1
- Tomato paste – 1/2
- Green chilies paste – 3
- Ginger-garlic paste – 1 tablespoon
- Turmeric powder – 1 teaspoon
- Red chili powder – 1 teaspoon
- Coriander powder – 1 teaspoon
- Salt to taste
- Mustard Oil – 2 tablespoons
- Clarified Butter – 1 tablespoon
For Tempering
- Black Cardamom – 1
- Green Cardamom – 2
- Cloves – 3
- Cinnamon Stick – 1/2 inch
- Bay leaf – 1
- Star anish – 1/2
- Whole Red chili – 1
Method
- After cutting each cluster fig in half and carefully removing the seeds with a small scoop, proceed to wash them thoroughly to remove any visible dirt. Next, take a pressure cooker and set it on medium heat. Now, add the cluster figs along with turmeric powder, salt, and half a liter of water. Close the lid tightly and pressure cook on a high flame for 2 whistles.
- Once the cooking is complete, turn off the flame and allow the pressure to release naturally for 10 minutes. Subsequently, strain the cluster figs using a strainer to remove any excess moisture or liquid.
- In a separate pan, heat oil over medium heat and add cumin seeds, whole red chili, bay leaf, and whole garam masala, allowing them to splutter for added flavor. Following this initial step, add finely chopped onions and sauté until they turn golden brown. Incorporate ginger-garlic paste into the mixture and sauté for another minute, infusing the dish with aromatic flavors.
- Now, it’s time to further enhance the dish’s flavor profile by adding turmeric powder, red chili powder, coriander powder, and salt, ensuring a well-balanced blend of spices. Introduce a paste made from tomato, onion, and green chili, cooking until the raw smell dissipates.
- Then, gently stir in the boiled cluster figs, ensuring they’re thoroughly coated with the flavorful spices. Cover the pan and let it simmer for 10-15 minutes until the figs become tender, occasionally stirring to prevent sticking.

- Finally, enrich the dish with clarified butter, adding a luxurious touch to the flavors.
