- Onion – 3 (medium size) or 180 grams
- Green chili – 6 or 20 grams

1 – Finely chopped all these five ingredients (onion, green chili, spring onion, garlic and ginger) in food processor and then combine all the ingredients in a muslin cloth and squeeze out the all water. Don’t discard this water, save it and use it in any curry.
2 – Now take your chicken mince in a big bowl and add salt, coriander leaves, chopped ingredients, all dry spices and mix it well. Add clarified Butter (because chicken is dry so adding some fat makes soft kebabs but no need to add any fat if you are using mutton mince which has already fat in it.) and mix well. Cover and refrigerate for 20 minutes.
3 – Take out small portion from meat mixture and shape them small patties and keep aside. Repeat the procedure to make more such patties. Heat a fry pan and sprayed with clarified butter (Ghee) on medium heat.
4 – Place the kebab patties on the pan and shallow fry both side in oil till golden brown. Once done take out the all patties. Repeat with remaining patties.
4 – Serve hot with your favorite green chutney and onion salad.
