Bengali Tarkari (Bengali mixed vegetable sabji)
Bengali Tarkari is the mixed vegetable curry in Bengali Style. I use the Panch Phoran mixture in this, but there are ways to make it without the Panch Phoran.
INGREDIENTS
- French beans- 10
- Sem- 10 – also known as Lablab
- Potato- 1 ( large )
- Sweet potatoes- 2
- White Radish- 2 ( medium )
- Red Pumpkin- 100 gms
- Cabbage- 1/2 small
- Green chillies- 2
- Cauliflower- 10 florets
- Round brinjals- 2 small
- Mustard oil-1 and 1/2 tbsp
- Paanch phoran- 1/2 tsp
- Red chillies whole- 3
- Turmeric powder- 1 tsp
- Ginger paste- 1 tsp
- Sugar- 3/4 tsp
- Salt to taste
METHOD
- String French beans and sem.
- Peel potato, sweet potatoes, radish and red Pumpkin.
- Cut all the vegetables into slice.
- Shred the cabbage. Wash and slit green chillies. Wash the Cauliflower florets. Remove stem. Wash and cut brinjals into four pieces ( cut brinjals and potatoes just before using or else keep in water to avoid discoloring).
- Heat oil, add paanch phoran and whole red chillies.
- When they change colour add all the vegetables and stir.
- Add turmeric powder and ginger paste and mix well.
- Cover and cook over low heat till all the vegetables are cooked.
- Increase the heat so that all the moisture dries up. Add salt, sugar, slit green chillies and mix well. Cook for two minutes and take the pan off the heat.
Serve Bengali Tarkari with plain rice.
TIP on how to make Panch Phoran:
Paanch phoran is a mixtures of equal amount of black mustard seeds ( rai ), fenugreek seeds ( methi ), onion seeds ( kalonji ), fennel seeds ( saunf ) and cumin seeds ( jeera ).
