Baigan/Begun/Eggplant – 1
Turmeric – 1 teaspoon
Red chili powder – ½ teaspoon
Garlic green chili paste – 1 ½ teaspoons.
Salt to taste
Mustard oil for frying
Rinse the Baigan or Begun or Brinjal or Eggplant and pat dry with a kitchen towel and cut into 4 pieces.
Now add turmeric powder, red chili powder, salt and garlic green chili paste. Mix well. Cover and let them rest for 5 minutes.
Heat mustard oil in a pan. When the oil begins to smoke, reduce the heat and add the slices to the oil in the pan.
Fry them on a low-medium heat for 3-4 minutes on one side before you flip them to cook on the other side. Cook them until sufficiently golden on both sides.
When golden, lift the baigan bhaja from the oil.
Serve with khichari or rice & dal.
